ingredients needed

  • 500g salmon fillet (skin on, pin bones removed), 2 tbsp salt, 2 tbsp sugar, 1 tsp white pepper,
  • 1 small bunch of fresh dill (roughly chopped),
  • 2 tbsp Swedish sweet mustard (or Dijon + honey)
  • 100ml neutral oil, 2 tbsp chopped dill (for sauce)
  • 1 tbsp sugar, 2 tbsp white wine vinegar

directions

  • Mix salt, sugar, and white pepper. Rub the mixture evenly over the salmon on both sides. Place chopped dill on top of the flesh side.
  • Wrap tightly in plastic wrap and place in a dish. Weigh down with something heavy (e.g., another dish) and refrigerate for 48 hours, turning once after 24 hours.
  • For the sauce, whisk together mustard, sugar, and vinegar. Slowly drizzle in oil while whisking until thick. Stir in chopped dill.
  • Slice the salmon thinly at an angle and serve cold with hovmästarsås, crispbread or boiled potatoes.
